Ingredients
1 cup cooked quinoa
1 handful fresh spinach or arguala
1/4 cup chopped cucumber
1/4 cup halved cherry tomatoes
1/4 cup chickpeas (raw or roasted)
1/4 cup kalamata olives
1/8 cup thinly sliced red onion
1/8 cup hummus and/or taziki sauceÂ
sprinkle feta cheese crumbles
1Tbsp olive oil
1/2 lemon juiced
salt & pepper to taste
Preparation
Add ingredients to a bowl in the order listed and Enjoy!
